Recipe: Espresso Chocolate

I thought about this one when I noticed I have half a jar of ground espresso coffee that I haven't used to make coffee in quite a while. Being a sucker for a good chocolate coated coffee bean (they can be surprisingly addictive, which SUCKS if you want to sleep later), I decided to give the idea a go, but using ground coffee instead.

Espresso Chocolate

Ingredients:

3/4 bag Nestlé Melts (Milk, but you could use dark or white if you wanted to)
3-4 level scoops of ground espresso coffee (I think the one I have is either Vittoria or Lavazza, but you could use any brand you like)
Ice Cube Tray

What to do:

1: Take a large saucepan and fill it halfway with water. Take a smaller saucepan or a bowl and place into the larger saucepan. This is called a "double boiler" and stops you from burning the chocolate.
2: Empty 3/4 of the bag of chocolate melts into the saucepan and wait for it to melt, stirring when it starts to become liquid.
3: Stir in the coffee, one scoop at a time, making sure that each scoop is combined before you continue.
4: Once all the coffee grounds are mixed in, using a small spoon, spoon the mixture into each compartment of the ice cube tray. Don't worry if you get it everywhere just yet.
5: Once you have filled all the spots, using your spoon, smooth the chocolate as best as you can, and make sure there's no chocolate on the edges of each square.
6: Refrigerate until set.
7: To pop the cubes out, just twist the ice cube tray as though you are removing ice cubes.

Makes 14 pieces. Alternatively, you could use whole coffee beans and spread the mixture onto a cookie sheet, breaking it into pieces after it has set. This would make a nice gift for any chocolate/coffee addict friends you might have. I'm going to try it with coffee beans next time.
